Nicola Sante Cafagno
Cafagno, a native of Bari, Italy has served as executive chef at Mosquito Hotels since 2008.
Cafagno graduated in gastronomy from the IPSSAR Perotti Culinary Institute in Bari in 2001. His career began in 1998 with an internship with Master Chef Vito Semeraro. In the following summers while attending school, Cafagna worked in Sardinia as a commis de cuisine at the Rocce Sarde Hotel. In 2001, he opened a catering company, and also worked in Courmayeur at the Courmayeur Grand Hotel and in Rome. At the end of 2001, Cafagno went to Puglia, and helped open a four-star restaurant at the Calane Hotel and a restaurant at the 5-star Alborea Suite Resort. His talent led him to positions at Panda Resaturant in Rome (2003 -2004, 2006-2007); as a sous chef at the Alborea Suites Resort in Puglia (2005); at the Four Seasons Hotel in Milan where he worked under master chef Sergio Mei (2005-2006); and as a chef at 5 -tar Kalidria Hotel, in Nova Yardinia, Puglia (2007)
He and fellow chef Francesco Incesti are long-time friends and colleagues.
Incesti, a native of Bari, Italy, is executive chef at Mosquito Hotels since 2008. From a young age, he accompanied his mother in the kitchen, listening to her secrets on capturing the flavors of food, and his father in the field, learning to appreciate the labor it takes to grow each product.
For 15 years, Incesti has worked throughout Italy in the Sheraton Hotel in Milan (1997), the Hotel Villagi in the Salento region (1998-99), Mont Blanc Hotel in Courmayeur (2001), the Es Hotel in Rome (2001), Hotel Calane and Alborea Hall Suite Resorts in Nova Yardinia, Puglia (2002-2003), the Panda Restaurant in Rome (2004-05 and 2007), and the Four Seasons Restaurant in Milan (2006).
Following in the footsteps of his teachers, master chefs Vito Semeraro and Sergio Mei, Incesti says he understands the importance of cooking in the traditional way, maintaining the philosophy of simplicity and tradition, without excessive use of modern technology.
